Rain on the Screens

We woke this morning to a grey rainy day. No fog, but lots of cold, damp rain. Even the window screens are covered in raindrops. It's Sunday and a good morning for coffee and the paper. We are sitting here with feet up taking it slow. Today I'm gonna work in the kitchen.

Maybe I'll make a cheesecake or maybe chocolate chip cookies? I wonder what we will have for dinner, tonight? Just thinking about cooking reminds me of what we already made and enjoyed this week.

Homemade Apple Pie

I did not tell you about the apple pie. At Sobey's a big bag of beautiful Macintosh apples was for sale. It's not apple season in the US, but since I'm in Canada and they were Canadian apples, I bought a bag. There is something about red and green Macintosh apples that are irresistible. Especially when you put them in a pie.

Of course, pie is nothing without ice cream.

I made the pie crust, put it in the fridge and then decided to continue the pie theme by rolling out a pizza dough. We had left over smoked salmon and it's delicious on pizza.

I prepped the pizza and returned to the pie, by prepping the apples. In the meantime, the crust remained in the fridge until the very last minute. That's the secret to a flaky crust!

Rainy Day Chewie

Yes, a day like today makes me want to crawl back into bed. However, the kitchen is calling!  Unlike Chewie, I'm not going to hid in or under the bed.  I'm gonna have some fun in spite of the weather!

I think this is what Chewie is dreaming about as he snuggles under the bed:

If I could guess, I would say, Cooper is sharing that same Dream with Chew.
